Ingredients
1 tsp Oil
1 Zucchini, diced
1/2 Onion, diced
2 Cloves garlic, minced
2 tsp Fresh oregano, minced
4 Eggs
1 tsp Each of salt & pepper (or to taste)
Instructions
Over medium heat, cook the zucchini in a dry pan for 2 minutes. Add oil, onion, and garlic and cook for an additional 4-5 minutes or until onions are translucent. In a separate bowl, whip eggs thoroughly. Add the eggs and oregano to the pan and cook for 2-3 minutes or until eggs are fully cooked. Season with salt and pepper and serve immediately.
