Ingredients
1 Cucumber
3 cloves Garlic, minced
20 oz Greek yogurt
2 tbsp Apple cider vinegar
1 tbsp Fresh dill, minced (or dried dill weed)
3 tbsp Salt
Instructions
Slice the cucumber in half and remove the seeds. Finely dice the rest of the cucumber and place in a strainer in the sink or over a bowl. Sprinkle with salt and let sit for 30 min or more to draw the moisture out. Squeeze out as much of the remaining liquid as possible and transfer to a medium bowl. Add remaining ingredients and combine well. Serve immediately or let sit for 3-6 hours for better flavor. Goes well with breads, vegetables, or falafel.
