Ingredients
Salad:
Mixed greens
Snap peas, sliced
Pickled or roasted beets
Cooked beans or hard boiled egg
Cheddar or gouda, diced
Chopped hazelnuts
Dressing:
1 cup olive oil
½ cup balsamic vinaigrette
Juice of ½ lemon
1 cup strawberries, tops removed and cut in half
1 tsp salt
1 clove garlic or ¼ cup diced garlic scapes
1 tbsp fresh thyme leaves
Instructions
Combine dressing ingredients in a blender and blend until smooth. Use immediately or store in a sealed container for up to 2 weeks. Substitute other berries as they are available seasonally. Combine salad ingredients in a bowl or on a plate and add dressing.
