Roasted Root Veggies


Roasted Root Veggies

  • 3 lbs. root vegetables such as potatoes, parsnips, and beets
  • 1 medium onion
  • 2 cloves of garlic
  • 5 tablespoons olive oil
  • Salt

What to Do:

  • Preheat oven to 450 degrees.
  • Wash and dry root veggies well.
  • Chop root veggies and onion into 1 inch pieces. Mince garlic.
  • Coat baking tray with 4 tablespoons of olive oil.
  • Toss root veggies, onion, and garlic with remaining 1 tablespoon oil.
  • Spread root veggies evenly on baking tray and sprinkle with salt.
  • Bake for 15-20 minutes. Remove from oven and flip veggies with a spatula.
  • Return to oven for 15-20 minutes more, until golden brown and tender.
