Ingredients:
- 3 lbs. root vegetables such as potatoes, parsnips, and beets
- 1 medium onion
- 2 cloves of garlic
- 5 tablespoons olive oil
- Salt
What to Do:
- Preheat oven to 450 degrees.
- Wash and dry root veggies well.
- Chop root veggies and onion into 1 inch pieces. Mince garlic.
- Coat baking tray with 4 tablespoons of olive oil.
- Toss root veggies, onion, and garlic with remaining 1 tablespoon oil.
- Spread root veggies evenly on baking tray and sprinkle with salt.
- Bake for 15-20 minutes. Remove from oven and flip veggies with a spatula.
- Return to oven for 15-20 minutes more, until golden brown and tender.
