Ingredients
1 cup all-purpose flour
2 eggs
1/2 cup milk
1/2 cup water
1/4 teaspoon salt
5 tablespoons butter
1/4 cup honey
2 tablespoons fresh lemon juice
3 cups mixed berries (3/4 lb) such as raspberries, blackberries, and blueberries
Instructions
Heat 3 tbsp butter in a sauce pan over medium-low heat. Add berries, honey, lemon juice, and 3tbsp butter. Stir to combine and heat until berries release their juices. Reduce heat to low and stir occasionally to avoid burning.
In a large mixing bowl, whisk together the flour and the eggs. Gradually add in the milk and water, stirring to combine. Add the salt and 2 tbsp butter; beat until smooth. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle. Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side. Serve crepes on a plate topped with the compote.
