Tender baby spinach is tasty and nutritious dressed in this simple honey Dijon salad dressing. Add some color and variety with other vegetables like grated carrot and cherry tomatoes. The Honey Dijon Vinaigrette will keep for 1 week stored air-tight in the refrigerator.
Ingredients
4 cups (about 4 ounces) fresh baby spinach
1 hard cooked egg, quartered
4 tablespoons Honey Dijon Vinaigrette
Place 1 cup of baby spinach (lightly packed) onto each salad plate and top with 1 egg quarter.
Drizzle 1 tablespoon of the vinaigrette over each salad.

Honey Dijon Vinaigrette
Makes ¾ cup
Ingredients:
¼ cup red wine vinegar
2 teaspoons honey
2 teaspoons Dijon mustard
1/8 teaspoon salt
½ cup vegetable oil
For the vinaigrette:
Combine vinegar, honey, mustard and salt in a mixing bowl. Whisk together until well blended.
Slowly add the vegetable oil while whisking, continue to whisk until well combined.
