Whole Grain Berry Pancakes

Ingredients

½ stick Butter or 4 tbsp oil
2 cups Whole wheat flour
4 1/2 tsp Baking powder
1/2 tsp Salt
2 tsp Ground cinnamon
2 tsp Ground Cardamom
2 tsp Honey
2 Large eggs
2 cups Whole milk
2 tsp vanilla extract
1-½ cups Frozen blueberries (other berries work if chopped finely)
½ cup Chopped hazelnuts or other nuts (optional)

Instructions
Whisk all dry ingredients in a medium mixing bowl. Add wet ingredients and whisk until smooth. Add berries and nuts and mix until they are evenly distributed.

Add butter or oil to a hot pan on medium heat. Scoop batter onto pan in ½ cup scoops. Cook until the edges start to bubble and the underside is golden brown. Flip and cook an additional 2 minutes or until underside is golden brown. Repeat until all pancakes are cooked. You can store warm pancakes on a plate covered with a towel, or in the oven at 150. Serve with jelly, maple syrup, honey, nut butter, or some combination.
